What I Ate This Week

Hi, friends! I'm back with another round up of weekly eats and a few reads from around the web. Enjoy. :)

Following Earth Day, I loved reading this. Virtual high five, REI. Here are resourceful tips and tricks for helping protect our planet. Oh, and this has good suggestions too.

I just finished eating pizza, but here are a few dishes I'm salivating over: Roasted Vegetable Spring Lasagna from Love and Lemons, Green Goddess Spring Socca from The Full Helping, Yellow Squash Ribbon Quiche from The Forest Feast, and Strawberry Shortcake Doughnuts from Joy The Baker. YUM.

More changes are on the horizon, Colorado. Oh, and Denver's garden shops make me very happy.

I found this fascinating. This is great too.

Last but not least, Kylie's thoughts on overeating and Robyn's thoughts on snacking were both insightful and comforting. I always, always love their intuitive eating / body acceptance content. 

Okay! Onto the food. This past week, my husband was sick with a cold, so I made a huge batch of chicken noodle soup for him. We enjoyed it throughout the week, then celebrated his birthday (a bit belated) at Barolo Grill. It's a very special spot, and we savored every bite. I only took one food photo there, but my husband loved his crème brûlée and my hazelnut ice cream was delish. The following morning, we went out for an early breakfast at Social Fare (it was...fine). Oh, and least we not forget the wind storm that left us without power for almost 12 hours. We went out for Mexican food the night of the storm and then lit every candle in our apartment when we got home. 


All the usuals: oatmeal, smoothie bowls, yogurt and chia seeds, eggs and toast, etc. 


A few super quick / easy lunches this past week. Leftovers (soup, polenta, veggie sausages, mock 'tuna' salad, etc.), sandwiches, wraps, lots of hummus, and salads. I also had lunch with two girlfriends at Vital Root — I had a goat cheese salad and a veggie sandwich (unpictured).


Pizza, polenta, and lots of sautéed veggies were had this past week. P.s. I've been loving these vegan sausages lately. 


Loving lately: chocolate chips, tahini, sliced bananas, chia pudding, Health-Ade, and Oatmega bars.
