Delicious Grain-free Pumpkin Bars
I can hardly believe that Thanksgiving is one week away—I swear it was just September a few days ago. But, no complaints. I love this month. Even though the days are shorter, the skies are still blue and winter hasn't quite made her appearance.
This year, we're spending Thanksgiving in Denver, and I can't wait. There's something very adult-ish about showing your family members where you live...and making (most of) Thanksgiving dinner for them, right?
In addition to serving a few pies, which I likely won't be making, I'll also dish up these pumpkin bars for dessert next week. I tested them yesterday, and I can't get enough. They taste like a more wholesome, nutty version of pumpkin pie. They're perfectly sweet, fudge-y, and satisfying. With the ingredients I had on hand, I ended up making these without gluten, refined sugar, or dairy, so they're vegan, paleo(ish), and gluten-free! But, I promise you wouldn't know.
You can slice them into squares and eat them plain, otherwise, dust some shredded coconut on top, serve them with a scoop of vanilla ice cream, or whip up a simple frosting. Yes, they're healthier than your average pumpkin bar, but they're still absolutely gooey and delicious. You'll find the recipe below! Enjoy :)
- 2 cups almond flour
- 1 cup pumpkin purée
- 1/4 cup coconut sugar
- 1/4 cup almond butter
- 2 tbsp coconut oil, melted
- 2 tbsp almond milk
- 1 tbsp maple syrup
- 2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
1. Preheat your oven to 350F. Line an 8x8 baking pan with coconut oil.
2. In a large bowl, whisk together pumpkin purée, almond butter, coconut oil, maple syrup, coconut sugar, almond milk, and vanilla extract. Make sure your coconut oil isn't piping hot.
3. In another bowl, combine your dry ingredients. Pour your wet ingredients into your dry ingredients and mix evenly. But, don't over mix.
4. Pour your batter into your baking pan (you'll need to use a spatula to spread out the dough).
5. Bake for 30-35 minutes, or until the edges start to brown.
6. Let the pan cool completely, then slice. The bars will still be a bit gooey in the middle.
